Item No.: 24
Site: Galley-Washington
Violation: The conveyor platewasher #10308830 was started shortly before the inspector entered the area. The machine was stopped and the inspector's lollipop type thermometer was placed in the center of the machine in close proximity to the underside of the tilted plates transitioning the machine in order to isolate the final rinse temperature. The temperature measured 140F. The final rinse reading on the machine gauge indicated 189F. The machine was stopped again and the thermometer was placed toward the wall side of the machine and a thermo-label was placed on an adjacent plate surface. The thermometer indicated 158F and the thermo-label indicated below 150F. The machine was allowed to run a short moment while the previously cleaned plates were examined. No adjustments were made to the machine and for a third time the inspector placed the thermometer, this time onto a dish rack with a plate containing a thermo-label. The temperature measured 165F and the thermo-label indicated above 160F. Staff indicated that the machine was just placed into operation prior to the inspector arriving. The inspector observed less than 10 plates that may not have been properly sanitized and these plates were rewashed.
Recommendation: In a mechanical operation, ensure the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F) or less than: (1) 74C (165F) for a stationary rack, single-temperature machine; (2) 82C (180F) for all other machines. Ensure the utensil surface temperature is not less than 71C (160F) as measured by an irreversible registering temperature indicator.

Site: Galley-Pastry
Violation: A soiled power cord for a time control heating unit just outside the pastry was draped on the food preparation counter beside the unit.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Galley-Dishwash
Violation: Water began dripping onto the deck from a 20 x 20 cm hatch adjacent to the dirty dish drop off beside the 2 sink handwash after the inspector entered the area. The area was in use.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Site: Provisions-Dairy Cooler
Violation: A quart plastic container of cottage cheese was wedged between the case and shelf causing the container to be dented and partially opened. The food was discarded.
Recommendation: Ensure food packages are in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Ensure canned goods with dents on end or side seams are not used.

Site: Integrated Pest Management-Food Areas
Violation: Two houseflies were observed in food areas. One behind the crew buffet line during lunch service and one on a white plate inside the staff mess under the sneeze shield on the buffet.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.

Site: Bar-Blue Iguana
Violation: During embarkation while the bar was open the solution in the sanitizer bucket was over 200 ppm. This was immediately corrected.
Recommendation: Ensure sanitizing solutions are used with the following concentrations: (1) A chlorine solution with a concentration between 50 mg/L (ppm) and 200 mg/L (ppm); (2) An iodine solution with a pH of 5.0 or less or a pH no higher than the level for which the manufacturer specifies the solution is effective AND a concentration between 12.5 mg/L (ppm) and 25 mg/L (ppm); (3) A quaternary ammonium compound solution with a concentration as specified in 40 CFR 180.940 Sanitizing Solutions AND as indicated by the manufacturer?s use directions included in the labeling. If another solution concentration or temperature of a chlorine, iodine, or quaternary ammonium compound is used, demonstrate to VSP that the solution achieves sanitization and the use of the solution is approved. If a chemical sanitizer other than a chlorine, iodine, or quaternary ammonium compound is used, ensure it is applied in accordance with the manufacturer?s use directions included in the labeling.

Site: Bar-Red Frog
Violation: A glue like residue from a sticker was on the underside of 2 wine pour carafes out for service while the bar was open.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Potable Water-Deck C Bunkering Analyzer
Violation: The paper chart installed in the bunkering chart recorder was scaled 0-5 for chlorine but did not have a 0-14 pH scale. Active bunkering was occurring at the time of the observation. Other bunkering records that were reviewed had the proper scales. Crew explained that the staff who normally performed bunkering duties were busy with immigration, and that a new engineer was working on the area. Crew stated the chart would be changed and calibrated. Crew presented documentation to the inspector that the new engineer had been trained on the proper chart type for bunkering.
Recommendation: Maintain the halogen analyzer-chart recorder properly and operate it in accordance with the manufacturer?s instructions. Ensure the bunkering analyzer-chart recorder has the following ranges:1) 0-5 ppm; and 2) 0-14 pH.

Site: Potable Water-Deck C Potable Water to Technical Water Fill Line
Violation: The vent of the reduced pressure (RP) backflow prevention device was blocked and bolted closed. Crew were unable to confirm if the line was active or out of service. Crew stated that the vent blockage would be corrected.
Recommendation: Maintain backflow prevention devices in good repair.

Site: Potable Water-Deck 8 Far Point
Violation: The far point sample line was below the top of the sink, and no air gap was present. Crew immediately cut the sample line one inch above the top of the sink to create a proper air gap.
Recommendation: Provide a comprehensive cross-connection control program. Protect the following connections to the potable water system against backflow with air gaps or mechanical backflow prevention devices: (26) other connections between the potable water system and a nonpotable water system, such as the gray water system, laundry system, or technical water system (install an air gap or a reduced pressure assembly); (28) any other connection to the potable water system where contamination or backflow can occur.

Site: Recreational Water Facilities-Aft and Midship Pool
Violation: The water level of both pools was above the pool skim gutters but below the beach skim gutters. Due to the fill level, the water at the top of the pool was not being skimmed or filtered. Floating debris was visible, including a clump of hair at the aft pool.
Recommendation: For RWFs with skim gutters, ensure that the fill level of the RWF is to the level of the skim gutters. Design recirculation systems and equipment, including chemical control equipment, UV disinfection systems, filter, and pumps to maintain adequate water chemistry control while operating at the following minimum turnover rates: (1) swimming pool (VSP 2005 Construction Guidelines or earlier): 6 hours; (2) swimming pool (VSP 2011 Construction Guidelines or later): 4 hours; (3) children's pool: 0.5 hours; (4) wading pool: 1 hour; (5) whirlpool spa: 0.5 hours; (6) spa pool: 2 hours; (7) interactive RWF or activity pool less than 610 millimeters (24 inches) deep: 1 hour; (8) interactive RWF or activity pool greater than 610 millimeters (24 inches) deep: 2 hours; and (9) baby-only water facility: 0.5 hours. Ensure an RWF slide that is combined with a pool has a turnover rate that matches the rate for the pool.

Site: Recreational Water Facilities-Forward Pool
Violation: A total of 6 screws were missing from 3 of the large square antientrapment drain covers. There were a total of 6 drain covers installed. The installation document that crew presented to the inspector indicated 9 screws were to be used.
Recommendation: Ensure antientrapment drain covers are installed in accordance with manufacturer specifications.
