Site: Buffet-Staff Mess
Violation: One bowl of pears was out for service on the second level of the buffet line at the staff mess. The sneeze shield over this area did not effectively protect the pears.
Recommendation: Protect food on display from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; self-closing hinged lids; or other effective means. Install side protection for sneeze guards if the distance between exposed food and where consumers are expected to stand is less than 1 meter (40 inches).

Violation: A coffee machine was located in the backside of the engine control room. Crew stated the coffee machine was out of order. The machine was sitting directly on a counter that was not constructed to food service standards. The counter under the machine was soiled with coffee debris.
Recommendation: Ensure only articles necessary for the food service operation are stored in food preparation, food storage, and warewashing areas.

Violation: A coffee machine was located in the backside of the engine control room. Crew stated the coffee machine was out of order. The machine was sitting directly on a counter that was not constructed to food service standards. The counter under the machine was soiled with coffee debris.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: A coffee machine was located in the backside of the engine control room. Crew stated the coffee machine was out of order. The machine was sitting directly on a counter that was not constructed to food service standards. The counter under the machine was soiled with coffee debris.
Recommendation: Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: A bottle of water was stored directly on the deck. Staff stated this water was used for drinking.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.

Site: Recreational Water Facilities-Aft Pool Analyzer-Chart Record Review
Violation: The halogen values on the November 24 analyzer-chart recorder chart were extremely faint, making it difficult to determine if the facility was in compliance. Crew stated the pen ran out of ink.
Recommendation: Maintain and operate the halogen and pH analyzer-chart recorder in accordance with the manufacturer?s instructions. Conduct a manual comparison test before opening the RWF to verify calibration for free halogen residual and pH. Ensure the analyzer reading is within 0.2 ppm for free halogen and 0.2 for pH. For RWFs open longer than 24 hours, conduct a manual comparison test every 24 hours.

Site: Potable Water-Tank Maintenance Record Review
Violation: The drying time was unclear on the record for maintenance conducted on August 26th on the number 2 center potable water tank. The record stated a start dry time of 16:15pm and a finish dry time of 10:15pm.
Recommendation: Maintain accurate records of tank disinfection.

Violation: During breakfast service approximately 30 previously cleaned spoons were out for service on the buffet. The blue cloth napkin that was covering them was heavily soiled with food and at least 3 spoons contained food debris. All of the spoons were removed to be cleaned.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The light intensity measured 83 lux at the handwash station midship by the toaster during breakfast service.
Recommendation: Ensure the light intensity is at least 220 lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Violation: What appeared to be condensate from the adjacent dishwasher was constantly dripping from the deckhead fire sensor between the plate wash machine #10279842 and adjacent rack type washer onto the deck. The area was open cleaning breakfast dishes but none were impacted.
Recommendation: Ensure ventilation hood systems and devices operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.

Violation: Approximately 10 out of 100 round black waiter trays were cracked on the edges and difficult to clean. Staff explained these trays were evaluated at this location and discarded and replaced as needed.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: A significant amount of frozen condensate was observed above the condenser in the in the back right side of the freezer. Condensate was observed on the surface of more than 10 boxes of fish.

Site: Provisions-Frozen Fish
Violation: A significant amount of frozen condensate was observed on the boxes in the in the back right side of the freezer. Of the boxes with frozen concentrate, three boxes located just to the right of the condenser unit had obvious frozen condensate drips on the surface and down the sides of the boxes and a small puddle on the deck. One of these boxes containing shrimp was opened and contained a full layer of ice inside the bottom of the box in contact with the plastic bags of shrimp.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck. Protect food from contamination that may result from a physical, chemical, biological origin.
