Site: Galley-Deck 5 Warewash Starboard
Violation: The flight-type warewash machine's final sanitizing rinse temperature was less than 180F. The utensil surface temperature was checked several times by inspector and crew. The inspector and crew thermometers measured 153.8F, 153.2F, 153.1F, and 153.3F. The machine was shut down, and all items were taken to the portside warewash to be rewashed. The machine temperature was corrected before the end of the inspection.
Recommendation: In a mechanical operation, ensure the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F) or less than: single-temperature machine; 82C (180F) for all other machines. Ensure the utensil surface temperature is not less than 71C (160F) as measured by an irreversible registering temperature indicator.

Site: Dining Room-Deck 6 Flamingo
Violation: The aft beverage station juice dispenser was soiled with more than a day's worth of food debris in the food splash zone. The crew cleaned and sanitized the machine before the end of the inspection.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: At water mixer 4411.057G.005 the filling hose attachment for the stand mixer had more than a day's worth of food debris in the nozzle.

Site: Buffet-Deck 16 Lido Forward Starboard Service Island
Violation: The hand soap dispenser was out of hand-cleansing soap. This was immediately corrected. The area was in operation and another handwash station was available within 26 feet.
Recommendation: Ensure each handwashing facility has a supply of hand-cleansing soap or detergent and a supply of single-service paper towels available.

Site: Bar-Deck 8 Pig & Anchor
Violation: The port side crew handwash sink was out of hand-cleansing soap. The area was setting up, but not yet in operation. This was immediately corrected.
Recommendation: Ensure each handwashing facility has a supply of hand-cleansing soap or detergent and a supply of single-service paper towels available.

Site: Galley-Deck 17 Crew Toilet Room
Violation: The men's crew toilet door did not fully latch after self-closing. This was corrected before the end of the inspection.
Recommendation: Ensure toilet rooms are completely enclosed and have tight-fitting, self-closing doors which are kept closed except during cleaning or maintenance.

Site: Galley-Deck 16 Blue Iguana
Violation: Two food waste bins above the undercounter warewash machine were uncovered. The area was in operation, but the waste bins were not in continuous use. This was immediately corrected.
Recommendation: Cover receptacles and waste-handling containers when not in continuous use and after they are filled.

Violation: The technical space had food debris on the drain cover. This area was not in operation and had been previously cleaned and sanitized.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Site: Bar-Deck 8 Limelight Lounge
Violation: Some water was pooled on the deck underneath the deck-mounted soda can storage rack. Staff advised the water was likely from cleaning operations in the morning. The area was not in operation at the time. The deck was immediately cleaned and dried.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Site: Galley-Deck 17 Guy's Burger
Violation: The shatterproof coating on the center light-bulb above the serving counter was peeled and worn which exposed the unprotected light-bulb. The area was not in operation and the light-bulb was immediately replaced.
Recommendation: Ensure light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.

Violation: Two small flies were near the speed-rail in the outside bar area. One small fly was near the speed-rail in the inside bar area. Pest management was immediately notified and both areas were cleaned and sanitized.
