Site: Buffet-Deck 5 - Pig and Anchor Outside
Violation: The grout around the hotplate was missing making the area difficult to clean.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Galley-Deck 3 Cold Pantry
Violation: The aluminum tape material in the undercounter technical compartment for the bain marie was in disrepair and peeling. This was repaired before the end of inspection.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: Silicone was peeling and in disrepair along several pieces of equipment, including six portable ovens, two grills, and the combination oven.

Violation: When the inspector checked the in use chlorine sanitizing bucket with a test strip there was no change of color. Crew stated that no bleach was added.
Recommendation: Ensure sanitizing solutions are used with the following concentrations: (1) A chlorine solution with a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Site: Other-Deck 10 - Seafood Shack Aft Beverage Station
Violation: A soiled coffee cup was stored with clean cups out for passenger self-service. All the cups were taken back to be cleaned and sanitized again.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The exhaust hood above the preparation counter was heavily soiled with dust.

Violation: The previously cleaned exhaust hood overhang had grease residue. The area was not in operation. The area was cleaned and sanitized again.

Violation: Water pooled on the deck near the back service bar. Source of the water was unknown.

Violation: The deck in many locations of the center galley (e.g. soup kettles station, hot line and stacked ovens) was in disrepair, including poorly recessed deck tiles, missing grout, and chipped tiles.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

Violation: Water pooled on the deck to the right of the ice machines. The source of the water was unknown.

Violation: The deckhead had two missing fasteners that opened into a void space.

Site: Food Service General-Pests
Violation: During the inspection, 16 flies were observed throughout multiple areas. These area included: deck 11, Gigi galley by biodigester (1 fly); deck 10 near Refrigerator 49 (1 fly), Pizzeria (1 fly), lido galley dishwash (1 fly), forward buffet sliced fruit section (2 flies); deck 6 main galley near flight-type dishwash (4 flies), handwashing station near Room 44 (3 flies); deck 5 Havana bar (1 fly) and pantry (1 fly), and Pig & Anchor bar (1 fly), reflection dining room port side pantry (5 tiny flies), main galley wine cellar service pantry (6 tiny flies), main galley dry store area (4 flies). These areas were in operation and an IPM attendant was called immediately.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.
