Water piping from the evaporators and reverse osmosis units to technical tanks were striped blue/gray/blue to indicate distillate/permeate water directed to the potable water system. Staff were advised that only distillate/permeate water lines directed to the potable water system can have this color striping designation.

Stripe or paint potable water lines either in accordance with ISO 14726 (blue/green/blue) or blue only. Stripe or paint distillate and permeate lines directed to the potable water system in accordance with ISO 14726 (blue/gray/blue). Ensure no other lines have the above color designations. Stripe or paint these lines at 5 meters (15 feet) intervals and on each side of partitions, decks, and bulkheads, except where decor would be marred by such markings, including potable water supply lines in technical lockers. Do not stripe or paint potable water lines after reduced pressure assemblies as potable water. Identify all refrigerant brine lines and nonpotable chilled water lines in all food areas, such as on ice machines, ice cream machines, etc., with either ISO 14726 (blue/white/blue) or by another uniquely identifiable method to prevent cross-connections.

Two soft-serve ice cream machines were stored inside this fan room. One machine was wrapped in plastic, while the other was left open and exposed. Staff reported that the uncovered machine was used for spare parts, while the wrapped machine had been received from another vessel approximately six months ago but had yet to be put into service. The fan room had an open deckhead with exposed wiring and piping throughout, and the deck was soiled with general debris. The inspector informed staff that food equipment cannot be stored in this fan room. Later during the inspection, staff stated that the wrapped ice cream machine was actually broken and would also be used for parts. Staff reported that they would label the ice cream machines to ensure they are used only for spare parts. A similar finding was noted during the previous inspection.

Recommendation:
Ensure that the supervisor or person in charge of food operations on the vessel monitors the proper storage of food equipment in a suitable location and confirms that staff are knowledgeable about its use.
