Violation: A crew member was observed using his gloved hand to pour previously pooled fresh eggs from a bowl into a frying pan for a passenger's order. When pouring the eggs from the bowl, his thumb came into contact with the raw egg in the bowl. The crew member subsequently touched multiple working surfaces with this hand and thumb such as refrigerator door handles, cooking utensils, and the food contact side of a passenger's plate while plating without washing his hands and changing his gloves.
Recommendation: Ensure food employees clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and: (5) During food preparation, as often as necessary to remove soil and contamination and to prevent cross- contamination when changing tasks; (6) When switching between working with raw food and working with ready-to-eat food; (8) After engaging in other activities that contaminate the hands.

Violation: A crew member was observed using his gloved hand to pour previously pooled fresh eggs from a bowl into a frying pan for a passenger's order. This observation was discussed with senior crew members who immediately took corrective actions.
Recommendation: Ensure the supervisor or person in charge of food operations on the vessel monitors that: (4) Food employees are effectively cleaning their hands; (11) Employees are preventing cross-contamination of ready-to-eat food with bare hands by properly using suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.

Violation: The backflow cross-connection control log did not properly list the locations of the medical facility's backflow prevention devices. Remediation began immediately
Recommendation: Ensure the cross-connection control program includes at a minimum: a complete listing of cross-connections and the backflow prevention method or device for each, so there is a match to the plumbing system component and location. Include air gaps on the listing. Ensure a schedule for inspection frequency is set. Maintain a log documenting the inspection and maintenance in written or electronic form, and ensure it is available for review during inspections.

Violation: No reduced pressure backflow prevention devices were installed on three international shore connections. This was noted on the June 2018 construction inspection, the February 2019 operations inspection, and again on the July 2019 operations inspection. Staff stated they have ordered the devices, however, they have yet to arrive.
Recommendation: Provide a comprehensive cross-connection control program. Protect the following connections to the potable water system against backflow with air gaps or mechanical backflow prevention devices: (20) international fire and fire sprinkler water connections (install a reduced pressure assembly);

Violation: The pH levels in the whirlpool were measured at 8.13, 8.04, 8.17, and 8.23 in the tub with the inspector's test kit. No passengers were in the area at the time of the inspection. Remediation began immediately.
Recommendation: Maintain the pH level in all RWFs between 7.0 and 7.8. Immediately close facilities if these halogen and pH ranges are not maintained.
