Site: Buffet-Deck 16 Aft Beverage Station
Violation: The backflow prevention device for the countertop ice maker was corroded and the vents were blocked. Remediation began immediately.
Recommendation: Maintain backflow prevention devices in good repair.

Violation: The backflow prevention device for the upright ice machine was corroded and dripping water continuously. Remediation began immediately.

Site: Recreational Water Facilities-Deck 15 Megadrome/Jungle Pool
Violation: The interactive pool had halogen residual readings below 2.0 ppm. The inspector readings were 1.58 and 1.41 ppm, and the crew member readings were 1.51 and 1.43 ppm. The pool was immediately closed, and the halogen dosing system calibrated. The pool water was recirculated and retested 30 minutes later with inspector and crew member readings of 4.46 and 4.45 ppm, respectively.
Recommendation: Maintain a free residual halogen in recirculated interactive RWFs (activity pools), between 2.0 and 5.0 mg/L (ppm)

Site: Galley-Deck 5 Cold Pantry
Violation: One hotel pan of sliced provolone cheese dated 05 November 2022, that was stored in an undercounter refrigerator under temperature control, was not recorded in the cooling log.
Recommendation: Ensure logs documenting cooling of potentially hazardous foods prepared from ingredients at ambient temperatures, with the start time to the time when 5C (41 F) is reached are also maintained for a period of 30 days, beginning with the day of preparation.

Violation: The rack-type conveyor dishwash machine wash tank temperature did not meet the minimum 160F indicated on the data plate. The machine was taken out of operation for technicians to adjust.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Violation: The rack-type conveyor glasswash machine had a pipe below the sanitizing rinse compartment that was leaking continuously. Water pooled on the deck.

Violation: The potwash area for the pastry and bakery areas was overwhelmed with soiled items that were overflowing the designated racks. Multiple plastic pallets had additional soiled items. The potwash area was relying on the three-compartment sink because the hood-type potwash machine was out of service. Staff advised the inspector that the potwash machine would be promptly repaired to help address the over-accumulation of soiled items.
Recommendation: Ensure drainboards, utensils, racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Violation: The flight-type warewash machine had an excess amount of food and plastic debris in the prewash and wash compartments. The machine was stopped and cleaned during the inspection.
Recommendation: Ensure warewashing machines, drainboards, and the compartments of sinks, basins, or other receptacles used for washing and rinsing equipment, utensils, or raw foods, or laundering wiping cloths are cleaned: (1) before use; (2) throughout the day at a frequency necessary to prevent recontamination and accumulation of excessive debris, and to ensure that the equipment performs its intended function; (3) at least every 24 hours (if used).

Violation: There was a large, soiled white plastic basket of soiled items placed in the drying racks for clean items near previously cleaned and sanitized items. Additionally, a stack of heavily soiled shallow, metal pans were stacked inverted in the drying racks for clean items. Under the drying racks for clean items, two metal pallets were stored soiled. All these items were immediately removed and relocated to the soiled area.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck unless in packages on pallets, skids, or racks, which may be 127 millimeters (5 inches).

Violation: At the entrance to the pantry, there was a glue-type material on the deck in multiple areas. Additionally, the coving to deck-to-bulkhead juncture had seams with chipped grout in multiple areas. Remediation began immediately.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

Recommendation: Ensure ventilation hood systems and devices operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them. Ensure heating, ventilating, and air conditioning systems are designed and installed so that make-up air intake and exhaust vents do not cause contamination of food, food-contact surfaces, equipment, or utensils.

Site: Integrated Pest Management-Rat Guards
Violation: Two rat guards on the bow mooring lines had openings that created an entryway for pests. Staff stated that they had purchased new rat guards and closed the openings with tape.
Recommendation: Ensure rat guards are on all lines that go ashore upon arrival and until at least one hour before the ship leaves port. Ensure each line has at least one rat guard placed either as far as practicable from the pier or as far as practicable from the ship while being able to stuff any openings with non-chewable material.

Violation: Two of the three zebra scooters had peeling stickers that left a sticky residue and made the surface difficult to keep clean. Staff removed stickers from all zebra scooters.
Recommendation: Ensure surfaces of tables, chairs, and other furnishings that children touch with their hands are cleanable.
