Site: Galley-Deck 10 Blue Iguana
Violation: There was an uncovered food waste receptacle that was not in continuous use. Remediation began immediately.
Recommendation: Cover receptacles and waste-handling containers when not in continuous use and after they are filled.

Violation: A white serving tray for sweet breads was badly chipped at the corner and difficult to clean. The tray was removed.
Recommendation: Ensure multiuse food-contact surfaces are: (1) Smooth; and (2) Free of breaks, cracks, and chips.

Violation: The beverage station juice machine had an open penetration where the latch was missing above the juice dispensers. Remediation began immediately.
Recommendation: Ensure multiuse food-contact surfaces are: (1) Smooth; and (2) Free of breaks or open seams greater than 0.8 mm (1/32 inch). Food contact equipment must be maintained in good repair and condition that meets the materials, design, construction, and operating specifications of these guidelines.

Violation: The beverage station juice machine was missing a fastener neart the dispenser nozzle. Remediation began immediately.
Recommendation: Ensure multiuse food-contact surfaces are: (1) Smooth; and (2) Free of breaks and open seams greater than 0.8 mm (1/32 inch). Use only low profile, nonslotted, noncorroding, and easy-to-clean fasteners on food-contact surfaces and in splash zones. Prohibit the use of exposed slotted screws, Phillips head screws, or pop rivets in these areas. Food contact equipment must be maintained in good repair.

Violation: The beverage station juice machine had a slotted fastener in the food-contact splash zone. Remediation began immediately.
Recommendation: Ensure multiuse food-contact surfaces are smooth. Use only low profile, nonslotted, noncorroding, and easy-to-clean fasteners on food-contact surfaces and in splash zones. Prohibit the use of exposed slotted screws, Phillips head screws, or pop rivets in these areas.

Violation: The stackable conveyor oven was soiled with more than a day's accumulation of debris. Additionally, a brown residue was dripping and pooling on the deck. The area had previously been cleaned and sanitized and was not in operation. Remediation began immediately.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: A brown residue was dripping from the stackable conveyer oven and pooling on the deck.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Site: Buffet-Deck 10 Lido Omelet Station
Violation: The consumer advisory for the ham benedict did not specifically state that the eggs were served undercooked.
Recommendation: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish that is raw, undercooked, or not otherwise processed to eliminate pathogens is offered in a ready-to-eat form or as a raw ingredient in another ready-to-eat food, ensure the consumer is informed by way of disclosure using placards or other easily visible written means of the significantly increased risk to certain especially vulnerable consumers eating such foods in raw or undercooked form. Locate the advisory at the outlets where these types of food are served. Ensure that raw shell egg preparations are not used in uncooked products as described in section 7.3.3.2.3. Ensure that disclosure is made by a sign describing the animal-derived foods (e.g., ?oysters on the half-shell,? ?hamburgers,? ?steaks,? or ?eggs?); AND that they can be cooked to order or may be served raw or undercooked; AND a statement indicating that consuming raw or undercooked meats, seafood, shellfish, eggs, milk, poultry may increase your risk for foodborne illness, especially if you have certain medical conditions. Ensure the advisory is posted at the specific station where the food is served raw, undercooked, or cooked to order.

Violation: The bottoms of the risers for the counter mounted chopper were deteriorating. The inspector wiped the risers with an alcohol pad and it became soiled with a black residue.
Recommendation: Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Galley-Deck 3 Warewashing
Violation: The rack-type conveyor dishwash machine final sanitizing rinse exceeded 194F using the stick method to test the temperature. Staff took the machine out of service and called a technician. The final sanitizing rinse temperature was adjusted and the machine returned to service before the end of the inspection.
Recommendation: In a mechanical operation, ensure the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F) or less than 82C (180F).

Site: Galley-Deck 3 Aft Service Line
Violation: The undercounter refrigeration unit lock catch was sheared off, leaving a difficult-to-clean opening in the stainless steel near the handle. Remediation began immediately.
Recommendation: Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material. Design and construct nonfood-contact surfaces of equipment and utensils to be durable and to retain their characteristic qualities under normal use conditions.

Site: Galley-Deck 3 Warewashing
Violation: The flight-type conveyor potwash machine had baffles that were folded up into themselves and were not effectively separating the pre-rinse and final rinse compartments. The baffles were immediately adjusted.
Recommendation: Ensure the warewashing machine wash and rinse tanks are equipped with baffles, curtains, or other means to minimize internal cross-contamination of the solutions in wash and rinse tanks. Maintain warewashing equipment in good repair and proper adjustment that meets the standards of the materials, design, and construction of these guidelines.

Violation: There was one live, large fly.

Violation: There were 4 blocks of non-potable carving ice immediately adjacent to containers of ice cream. Ship crew immediately moved the ice blocks further away for greater separation.
Recommendation: Do not store foods under or adjacent to other sources of contamination from nonfood items such as ice blocks, ice carvings and flowers.

Violation: The floor mixer had a technical panel that was heavily rusted on the corner. Silicone had been used along the seam, but was deteriorated and difficult to clean. Remediation began immediately.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: The gelato machine nozzle holder was ineffectively secured with tape and silicon sealant. Remediation began immediately.

Site: Medical-Isolate Ill Crew
Violation: A Sales Attendant had an onset of acute gastroenteritis symptoms at 1010 on 10 November 2022. He reported to the medical center at 1050. According to his food/beverage questionnaire, he went to the crew mess at 1835 the day of illness onset. It was unclear if the crew member broke medical isolation,
Recommendation: When nonfood employees meet the case definition for AGE, ensure the following action is taken: isolate in cabin or designated restricted area until symptom-free for a minimum of 24 hours.

Site: Children Area-Camp Ocean 2-5 Years
Violation: In the toilet room for the children 2 to 5 years old, the handwashing sink height was 25 inches as measured twice by the inspector. The Entertainment Director immediately provided a step stool.
Recommendation: If toilet rooms are located in a child-activity center, provide a child-size toilet(s) or child-accessible toilet(s) (child-size seat and step stool) and handwashing facilities. Ensure handwashing sinks have a maximum height of 560 millimeters (22 inches) above the deck or a step stool.

Site: Ventilation-A.C. Station 5.1
Violation: The filter for the air handling unit servicing crew corridors was heavily soiled. The Refrigeration Engineer explained the corridor had recently been painted, resulting in the intake of fumes into this filter. The filter was immediately replaced.
Recommendation: Keep air handling units clean.
