Violation: THE RECORDKEEPING FOR THE POTABLE WATER, POOL & SPAS AND OTHER TECHNICAL AREAS WERE EXCELLENT.

Site: Medical-
Violation: THE MEDICAL STAFF COULD NOT LOCATE THE BACTERIAL SPECIMEN COLLECTION MEDIA. THIS IS A NEW REQUIREMENT IN THE 2005 VSP OPERATIONS MANUAL.
Recommendation: Ensure the medical staff maintains a supply of at least 10 clinical specimen collection containers for both viral and bacterial agents (10 for each), as well as the proper shipping containers and labels for the same and provided in Annex 13.4 of the VSP Manual.

Site: Galley-SPECIALTY GALLEY
Violation: A FEW CUTTING BOARDS LOCATED IN THE CLEAN STORAGE AREA WERE PITTED AND SCORED MAKING CLEANING DIFFICULT.
Recommendation: Ensure that surfaces such as cutting blocks and boards that are subject to scratching and scoring are resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: THERE WERE TWO PANS WITH SEVERELY DAMAGED NON-STICK COATING.
Recommendation: Ensure that multiuse kitchenware such as frying pans, griddles, sauce pans, cookie sheets, and waffle bakers that have a perfluorocarbon resin coating are used with nonscoring or nonscratching utensils and cleaning aids.

Site: Food Service General-
Violation: THE GASKET TO THE FRONT COVER OF THE MANITOWOC 1000 ICE MACHINES WAS CONSTRUCTED OF OPEN-CELL FOAM. THE LOWER EDGE OF THE COVERS WERE WET WITH CONDENSATION. IN THE ICE MACHINE IN THE CREW MESS, THE GASKET AT THE LOWER EDGE WAS SATURATED WITH WATER. THESE ICE MACHINES WERE ALSO LOCATED IN HOUSEKEEPING SERVICE PANTRIES.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Site: Galley-TERRACE CAFE - HOT GALLEY
Violation: THE SAFETY TAPE AND PADDING LOCATED ON THE HOOD ABOVE THE GRILL WAS DIFFICULT TO CLEAN DUE TO THE NATURE OF THE WRAPPED TAPE.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Food Service General-
Violation: THE DRIP TRAYS ON THE RANGE TOPS AND GRILLS WERE SHORTENED. A PLATE WAS INSTALLED IN THE BACK TO SHORTEN THE HOUSING FOR THE TRAYS. ON SEVERAL UNITS THROUGHOUT THE GALLEYS, THERE WERE DIFFICULT TO CLEAN GAPS AROUND THIS PLATE.
Recommendation: Repair the gap that exists around the back plate of the drip housing within the units.

Site: Bar-HORIZONS AND MARTINI BAR
Violation: SEALANT WAS MISSING AND PEELING AROUND THE JUNCTION BETWEEN THE COUNTER TOP AND THE STAINLESS STEEL SHIELD THAT WAS INSTALLED AROUND THE HAND WASH SINK IN THESE TWO BARS, MAKING CLEANING DIFFICULT.
Recommendation: Remove the peeling sealant and replace with new.

Violation: THE SAFETY TAPE AND PADDING LOCATED ON THE HOOD ABOVE THE GRILL WAS SOILED WITH A GREASY FOOD RESIDUE.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: THERE WERE 3 PLUGS MISSING FROM THE BULKHEAD, CREATING DIFFICULT TO CLEAN OPENINGS.
Recommendation: Install the three missing plastic wall plugs.

Site: Provisions-MEAT WALK-IN FREEZER
Violation: THE COLLAR AROUND THE FIRE SPRINKLER NEAR THE BACK LEFT CORNER WAS LOOSE AND CONDENSATION WAS COLLECTING ON THE DECKHEAD AROUND THE SPRINKLER HEAD. THIS IS A REPEAT ITEM FROM THE LAST INSPECTION.
Recommendation: Repair the protective collar around the fire sprinkler.

Violation: PEELING SEALANT WAS NOTED ON THE BULKHEAD IN THE CORNER TO THE RIGHT OF THE WALK-IN REFRIGERATOR, MAKING CLEANING DIFFICULT.
Recommendation: Remove the peeling sealant and replace with new.

Violation: THERE WAS A STEADY DRIP FROM THE ACCESS PANEL IN THE DECKHEAD.
