Site: Potable Water-CREW LAUNDRY
Violation: THE VENTS OF THE BACKFLOW PREVENTION DEVICES IN THE OVERHEAD WERE POINTED UPWARD.
Recommendation: Turn the backflow prevention devices so that the vents are pointed downward.

Violation: A PLASTIC 'CARNIVAL' SHOPPING BAG WITH SOILED UTENSILS AND A USED NAPKIN WAS FOUND IN UNDERCOUNTER REFRIGERATOR A-29.
Recommendation: Do not store soiled utensils and rubish in refrigerators.

Violation: A WET SOILED CLOTH AND AN OPENED BAG OF CORN STARCH WERE FOUND STORED TOGETHER IN AN UNDERCOUNTER NEUTRAL CABINET.
Recommendation: Ensure that soiled cloths are stored properly and that food containers are not stored with soiled cloths.

Violation: THE SNEEZE GUARDS ON THE ALTO-SHAM HOT FOOD TABLES WERE TOO HIGH. DURING THE LAST DRYDOCK, THE UNITS WERE MOVED CLOSER TO THE PASSENGER SERVING LINE, BUT THIS ACTION DID NOT DO ENOUGH TO PROTECT THE FOOD ON THE SERVING LINE FROM CONTAMINATION BY SHORTER PASSENGERS.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means. Lower or extend the sneeze guard to ensure food is proteced from potential contamination by average-height passengers.

Violation: SEVERAL PREVIOUSLY CLEANED PANS WERE FOUND SOILED WITH FOOD RESIDUE AND A GREASY FILM AND STORED AS CLEAN.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Galley-CREW GALLEY / POT WASH
Violation: THE WATER TEMPERATURE OF THE CHEMICAL SANITIZE SINK WAS SIGNIFICANTLY LESS THAN 75 F (24 C). THE HALOGEN LEVEL WAS WITHIN THE RANGE OF 50 - 200 PPM. THE POT WASHING MACHINE WAS UNDER REPAIR SO THE STEAM TO THE SANITIZE SINK WAS TURNED OFF REQUIRING THE USE OF CHLORINE AS THE SANITIZER.
Recommendation: Ensure that the chemical sanitizer is used in accordance with the EPA-approved manufacturer's label use instructions at a minimum temperature of 24C (75F) with an exposure time of 7 seconds for a chlorine solution and 30 seconds for other chemical sanitizers.

Violation: A BAR WAITER WAS NOTED RINSING AN ASH TRAY IN THE HANDWASHING SINK. IT WAS STATED THAT THE WAITER WAS A STUDENT AT ONE OF THE 'CARNIVAL COLLEGES'.
Recommendation: Ensure that handwashing facilities are used for no other purpose and are accessible at all times.

Violation: THERE WERE NO SAMPLE MEDIA FOR COLLECTING DIAGNOSTIC SAMPLES FOR BACTERIAL ANALYSIS OR SHIPPING CONTAINERS AND LABELS FOR THE SAME.
Recommendation: Ensure that at least 10 clinical specimen collection containers for both viral and bacteriological agents (10 each), as well as the proper shipping containers and labels for same, are maintained by the medical staff.
