The woman depicted here in her kitchen was in the process of cutting up a head of iceberg lettuce atop her clean, clutter-free countertop. She had placed a washed cutting board down on the counter, and a fresh towel beneath, in order to absorb excess water dripping from the freshly rinsed produce. Note that she had placed the lettuce shreds into a clean glass bowl. It is very important to prepare foods in as clean an environment as possible, thereby, minimizing the possibility of introducing foodborne contaminants into the food preparation process.
