The state appointed health inspector pictured here, was in the process of performing an assessment of this kitchen’s sanitary conditions. At this point in her inspection, she was taking thermal readings of a refrigerator’s contents, using an electronic thermometer. She can be seen here, wiping clean the thermometer’s metallic probe, after having taken a temperature reading of one of the refrigerated foods, and before inserting it into another of the refrigerator’s contents.
