This 1975 image depicted what had been the floor of a kitchen’s food preparation area, which was in an unsanitary state, primarily due to its run-down condition, allowing it to trap food debris. During a facility’s health inspection, all aspects of food preparation are observed. This image was used as part of a series, the purpose of which was to familiarize public health inspectors with proper food hygiene sanitation practices, and the myriad of food storage conditions found in migrant worker camps.
